Zucchini Lime Cake

Ok, as promised, lots of pictures of making the zucchini lime cake! (Otherwise known as Flora’s Famous Zucchini Cake in Nigella’s How to Be a Domestic Goddess). If zucchini cake sounds weird to you, just think of carrot cake, right? Not so weird now, is it? (or at least only as weird as carrot cake)
So to start with, we have our components–2 8″ round layers of zucchini cake:

One batch of lime curd (made from scratch!):

One batch of lime-flavored cream cheese frosting:

And a mini prep full of diced pistachios (it’s a very green cake):

And there it is! The cake itself tasted really good–provided you like lime. The lime curd, and to a lesser extent the frosting, kind of dominated everything. You’d never know it was zucchini cake, because you can pretty much only taste the lime. But despite that, it was super tasty, very tart and refreshing. And pretty to boot! Maybe next time I should use green food coloring in the frosting, lol.

I need the receipe! We had something very close to this last night, I am a chocolate lover - but this is even better!

I love this cake. I made my friend make this for my birthday 2 or 3 years in a row. The lime tastes fantastic and the cake is super-moist.
